Autumn Fruit for Free!

Now is the time to pick all those delicious blackberries and freeze for future use. 
Here is a picture of todays pickings, from the hedge next to Reception. I already have two tubs in the freezer ready to make crumble on those cold winter evenings. As I also have lots of strawberries that I have grown in my raised beds in the freezer, it is a quick five minutes of minimal effort to make a warming crumble.

For a change, and because my son is a vegetarian and also gluten intolerant, here is my recipe for fruit crumble using my blackberries and strawberries, which can be used straight from the freezer, without defrosting.  A very healthy alternative to the regular rubbed butter and flour topping.

1 lb mixed fruit - I use strawberries and blackberries, but you can use any fruit you have.
2-4 oz of any sugar you like, according to taste, some fruit may need more than others, depending on sweetness.

For the topping -
6 oz gluten free oats.
2 oz of any mixed seeds and nuts.
4 oz demerara sugar.

Place the fruit in an ovenproof dish, sprinkle the sugar over. In a seperate bowl, mix the oats, seeds, nuts and sugar together and sprinkle over the top. 

Bake in the oven for 20 to 25 minutes at 175 Centigrade

Keep an eye on it to check the nuts and seeds are not catching. 

Can be eaten hot, warm or cold, with cream, ice cream or custard. Enjoy!
